BRIX CITY / POOR HENRY’S LYCHEE BOOM BOOM WILD ALE

On tap at Poor Henry’s, splendid collaborative effort between Little Ferry brewer and Poor Henry zymurgist, Jesse, is a hazily beige-yellowed brettanomyces-soured wild ale utilizing floral-spiced lychee and vanilla beans to secure its dry-hopped (Citra-Galaxy) base. Alongside mildly acidic lychee adjunct, subtle unripe strawberry, passionfruit and yellow grapefruit illusions pick up herbal fennel, rosemary and thyme seasoning at crisp, clean sour-candied finish.

(4 HANDS) CONSTELLATION BRETTANOMYCES IPA (GALAXY HOPS)

Fine Galaxy-hopped version of brettanomyces-soured India Pale Ale offers lemony pineapple-grapefruit-orange tang and juicy mango-peach-passionfruit sweetness to sharp juniper-hopped bittering. Though bacterial brettanomyces influence remains uninvolving or merely secondary, pronounced fruitiness will appease sweeter thirsts dissuaded by acrid sour ales.

TRINITY SUPER JUICE SOLUTION SOUR IPA

On tap at Ambulance, sessionably soft-tongued India Pale Ale hybrid utilizes lactobacillus yeast souring to affect soft salt-watered citric hop pungency, Granny Smith apple tartness, tannic green grape vinegaring and light peach-nectarine-mango tang. Wispy coriander spicing underscores reluctant lemony grapefruit pining. Polite mineral graining freshens funky citric-soured finish.
